The task of a good shower strainer is to distribute the water flowing from the brew group as evenly as possible over the coffee in the strainer. Sounds simple at first, but experience has shown that most shower screens only adequately fulfil this task. The inventor of the Matrix Shower Screen, Omri Almagor, has now solved the problem in an impressive way.
His solution consists of a stainless steel plate made up of dozens of layers; each of these layers is made up of tiny spheres (7 µ in diameter) that are located at a distance of 4 to 5 µ (Mü) from each other. This construction leads to the following positive effects

1. As the water has to find its way through this labyrinth of beads, the pressure of the water decreases and it spreads evenly over the ground coffee; both result in all the coffee being extracted evenly and completely. Any kind of channelling is avoided (i.e. the water rushing through at some coffee points).
2. The improved extraction of the coffee allows it to be ground more finely and the amount of ground coffee to be reduced.
3. The tiny spaces between the beads, on the other hand, increase the capillary pressure, which has the effect of water and carbon dioxide splitting to form hot water, water vapour and carbon dioxide. The effect: a thicker and firmer crema.
4. This also has a lasting effect on the acidity of the espresso: unpleasant acids are avoided. Even in the case of lighter roasts with more floral-fruity notes, which otherwise tend to quickly develop aggressive acids, this extraction balances out the unpleasant acids.
5. And finally, the brewing head is protected from contamination by the ground coffee by the fine-pored structure of the shower strainer.
