Enhances sweet notes, reduces acidity

A new sieve with an unusual pattern of holes has been created in the E&B laboratory at IMS. The reason for this pattern of holes, according to IMS, is that it allows for an even extraction of the coffee when making espresso, with the sweet notes coming to the fore while the acids are reduced. These sieves are therefore less suitable for types of coffee that have lemony aroma components. Forcing the sweeter aromas would get in the way of the citrus notes.
