Enhances sweet notes, reduces acidity

A new sieve with an unusual perforation pattern has been developed in the IMS E&B laboratory. The reason for this perforation pattern, according to IMS, is that it ensures a uniform extraction of the coffee when preparing espresso, with the sweeter notes coming to the fore while the acidity is reduced. These sieves are therefore less suitable for coffees with lemony aroma components. Forcing the sweeter aromas would overwhelm the citrus notes.
