WDT stands for "Weiss Distribution Technique" and means that the ground coffee is stirred in the portafilter with needles. This breaks up lumps in the ground coffee and evenly distributes and loosens the ground coffee. Only then is it leveled and tamped.
The advantages are a more flavorful espresso through:
- more uniform extraction
- avoiding channeling
- improving the consistency of remuneration
